Hello, it’s me again! Sorry I have been MIA but if you have read much of my blog lately you know I have a good reason! 🙂

Miss Elizabeth Louise Poore made her debut on Halloween – my little pumpkin baby!!

So, of course, it has been quite hectic around here but I wanted to throw a quick recipe out there for you.  It’s a very popular, easy party dip that I’m sure you have seen at a many of parties.

7 Layer Dip

  • 2 cans of refried beans with greens chilies
  • 1 cup sour cream
  • 1 cup guacamole (I used premade)
  • shredded lettuce
  • shredded mexi-blend cheese
  • chopped tomatoes
  • chopped green onions (green part only)
  • tortilla chips

Spread beans evenly in a glass dish (9×11). Then layer the remaining indredients and serve with chips.

Now how easy was that?? Easy enough for a mom with a 4 week old to make and take to an Iron Bowl party, but we are not going to talk about that. RTR anyway!

What a busy wonderful weekend!

We had dinner with friends at a nice restaurant on Friday, ate barbeque ribs, pork tenderloin and many yummy appetizers on Saturday for the Bama game (I think my pulse may finally be back to normal after watching that nerve racking game) and on Sunday for the first time in a long time I had the whole peanut gallery over for dinner – Taco Pasta – more on that later in the week.

The appetizer that I quickly made up on Saturday for the game was Cream Cheese Sausage Balls adapted from Plain Chicken.

I like these sausage balls because they do not dry out like other sausage balls and this is of course because of the cream cheese. I also got a great tip from the the Plain Chicken blog and that was to mix the sausage ball ingredients up with the dough hook on your mixture.  This was huge for me – I sometimes avoided doing these pretty easy to throw together appetizers because I hated mixing the dough up by hand and with my current wrist condition – there was no way I would be able to, so with this helpful tip – I can pull this together in NO time!

Cream Cheese Sausage Balls

  • 1 lb hot (or mild -your heat preference) sausage, uncooked
  • 8 oz cream cheese, softened
  • 1 1/4 cups Bisquick (or all purpose baking mix)
  • 4 oz cheddar cheese, shredded

Heat oven to 400º

Place all ingredients into stand mixer with dough hook attachment.

Mix until well combined.

Roll into 1-2 inch balls, place on a foil-lined baking sheet and bake for 20-25 minutes or until brown.

Now that I know I can quickly mix this up with the dough attachment and since I usually have all these ingredients on hand (I buy the sausage when it’s buy one get one free at Publix and freeze it), I’ll be making these a lot for a quick last minute party or breakfast.

Yay!!! It’s that time of the year again!!! Football, Fun, Friends and FOOD!!!

I don’t care which team you pull for – just as long as you pull for one. I’m in a house divided. I’m Alabama, and he’s Auburn. If you’re not from the great state of Alabama – you might not get it but boy that sure can cause a few problems.

Luckily – we’re pretty good at compromise.

Example being – if we go to an Auburn game, I will not wear the logo but I’ll wear the colors and vice-verse (unless we’re playing each other and then it’s all out war!)

So whether or not it Roll Tide or War Eagle it’s time to break out the appetizers!!!!

I love a good football watching get together (not tailgating – that’s a whole different ballgame – more on that later this fall – shout out to my tailgate family – whoop whoop!!).

At a great football gathering everyone brings their best appetizer and you get to graze like a cow all day/night. I start thinking about which one I want to make days in advance!

One of my go to favorites is Taco Salad – proudly adapted from my Mammaw. She had it at every holiday dinner (right beside the turkey and dressing) and it was always the first thing to disappear.

Mammaw’s Taco Salad

  • 1 lb. ground beef
  • 1 packet taco seasoning
  • 31 oz can of refried beans
  • 8 oz of salsa
  • 16 oz of sour cream
  • 2-3 cups of shredded lettuce
  • 2 cups of shredded Mexi-blend cheese
  • 1 cup chopped tomatoes
  • 2-3 Tablespoons of chopped green onions
  • 2-3 Tablespoons of chopped black olives
  • Tortillas chips

Start by browning meat and following instructions on Taco pack seasoning.

Next you start by layering refried beans.

Next comes the prepared taco meat.

Mix together sour cream and salsa. Spread over taco meat.

After that – the lettuce.

Cheese.

Tomatoes, onions and black olives and there you have it – ready to serve with tortilla chips!
